In the early days of our marriage, my husband and I travelled to Washington, District of Columbia, for a couple of weeks to attend his work. We decided to get dinner before riding back to our hotel, and when we arrived at the metro stop, we noticed a small Mediterranean restaurant called Roti right around the corner. We decided to eat there before driving back to our hotel.

Ingredients

  • 1 ½ pounds chicken tenderloins – cut thick ones in half lengthwise
  • white or whole wheat pita bread
  • crumbled feta cheese
  • 5-Minute Tzatziki Sauce
  • green-leaf lettuce

Marinade

  • ½ cup olive oil
  • juice of one lemon
  • 1 teaspoon salt
  • ¼ teaspoon cracked black pepper
  • ½ teaspoon crushed red pepper flakes
  • 1 tablespoon minced garlic
  • ½ teaspoon garlic powder
  • 1 tablespoon Herbs de Provence – or Italian seasoning (see note)

Cucumber Salad

  • ½ cucumber – sliced or chopped, see note
  • ½ cup cherry tomatoes – halved
  • ¼ red onion – thinly sliced
  • 1 tablespoon freshly squeezed lemon juice
  • salt and pepper – to taste
  • pinch of fresh dill – optional

 

Instructions

Combine all of the ingredients for the marinade by stirring them together. Put the chicken in the marinade, toss it so that it is coated, cover it firmly, and place it in the refrigerator for at least half an hour (or for up to two hours if you want more flavour).

After the chicken has been marinated, combine all of the ingredients for the cucumber salad by stirring them together. Put aside for later.

Using tongs, move the chicken that has been marinated to a cooking surface that has been warmed (grill or skillet), and then cook it for five to six minutes on each side over medium heat until it is completely cooked through.

Put the pitas in an orderly fashion on a plate or a clean surface. Pita bread should be stuffed with lettuce, chicken, cucumber salad, feta cheese, and tzatziki sauce before being assembled into pitas.

Notes
