In a big skillet set over medium-high heat, warm the olive oil. Add the steak and onion, and cook for about 5 minutes, or until the beef is browned. Add the taco spice and the tomatoes with their juices. After lowering the heat to medium, simmer the mixture. Cook for about 7 minutes, stirring occasionally, or until the mixture thickens and most of the liquid evaporates. Take off the heat source.

Layer the tortilla chips in the bottom of the baking dish after gently crushing them.

Over the chips, evenly distribute the beans using a spoon. After spreading the meat mixture over the beans, sprinkle the cheese on top.

Bake for 20 minutes, or until the beans are heated through and the cheese has melted. Serve hot with tortilla chips and top with your preferred toppings.

Notes

Keep the cooked beef juices in tact. There will be some liquid in the pan once the steak and onion are cooked, but don’t throw it out! It gives this taco bake recipe the necessary moisture and flavour, and draining it will make it too dry. The consistency of the cooked beef combination should resemble “sloppy joe.”

The baking dish should be greased. To prevent the cheese from sticking, quickly spray cooking spray or brush the dish’s bottom with oil. This will make it easier for you to scoop out casserole servings.

Arrange the beans in a layer over the chips. This keeps the chips crispy after baking and keeps them from becoming drenched in the liquids from the beef mixture.

Make use of flavoured chips! For this dish, plain salted tortilla chips work well, but feel free to experiment with different flavoured ones. Even those with a bit of jalapeño or lime flavour would be good.

Use gluten-free tortilla chips as the basis to make it gluten-free. Alternatively, you can serve the baked dish with wheat or corn tortillas on the side and omit the chips.

FAQs

How do I store leftovers?

To ensure the chips maintain their crispness, it is preferable to serve this taco casserole recipe immediately. On the other hand, leftovers keep well in the fridge for three to four days when stored in an airtight container. For optimal consistency, reheat in the oven at 350°F for 15 to 20 minutes. When you’re ready to eat, I suggest keeping the toppings separate and adding them later!

This recipe is very readily prepped in advance for busy workdays! After preparing the beef combination, let it cool to room temperature and store it in the refrigerator in an airtight container. When it’s time to assemble, use the microwave to reheat the beef, then put the layers together and bake according to the recipe.
