Ingredients – 1 cup almond butter – 1/2 cup coconut sugar or sweetener of choice – 1 egg – 1 teaspoon vanilla extract – 1/2 teaspoon baking soda – 1/4 teaspoon salt – 1/2 cup chocolate chips or chopped nuts (optional) – Protein powder

1. Almond Butter Protein Cookies

Preheat oven to 350°F (175°C) and line baking sheet with parchment. Mix almond butter, coconut sugar, egg, vanilla extract, baking soda, and salt in a bowl. Add chocolate chips or nuts if desired.

Fork-flatten dough on prepared baking sheet. Bake until sides are golden brown, 8-10 minutes. Transfer cookies to a wire rack to finish cooling after a few minutes on the baking sheet.
