Healthy Chicken Quinoa Enchilada Casserole Recipe

This simple Chicken Quinoa Enchilada Casserole is delicious, protein-packed, and cheese-packed. This casserole pleases everyone!   

– 2 tablespoon olive oil – 1 small onion  – 2 cups quinoa  – 1 chicken breast – 4 ounce green chile – 1½ cups enchilada sauce – ½ cup cheddar cheese – 1 cup Mozzarella cheese


Preheat the oven to 350°F. Apply cooking spray to an 8-inch square ceramic or broiler-safe baking dish.  


A medium-sized skillet should be heated to medium-high heat. Cook the onion in the oil for five minutes, or until it becomes tender.  


Turn down the heat. Stir together the quinoa, chicken, black beans, green chiles, and enchilada sauce. Take off the heat.  


Add cheddar cheese and stir. Place quinoa mixture in baking dish that has been prepped. Evenly sprinkle mozzarella cheese on top.  


Bake for ten to fifteen minutes. Preheat the oven to broil. Broil the cheese for one to two minutes, or until it is bubbling and golden.  


Eliminate from the grill. On top, sprinkle some cilantro and sour cream. Serve as soon as possible.
