Quick and Easy Tostada Recipe

There are crunchy tortillas, perfectly seasoned beef, and lots of fresh toppings in this easy to make tostada recipe.  

– ½ cup vegetable oil (120mL) – 12 corn tortilla – 1 (16-ounce/454g) can refried bean – 1 onion diced – 1 pound ground beef (450g) – 1½ teaspoons chili powder – 1 teaspoon salt – 1 teaspoon ground cumin – 1 teaspoon paprika – ½ teaspoon garlic powder – ½ teaspoon oregano – ½ teaspoon black pepper Toppings (optional) – Queso fresco – Chopped avocado – Iceberg lettuce – Sour cream – Salsa or pico de gallo – Cilantro

INGREDIENTS

Heat oil in a large skillet on medium-high. Cook two tortillas at a time, rotating periodically, until crisp and lightly browned, 2–3 minutes. Drain and cool on a paper towel-lined platter.

Heat the refried beans in a small pot over medium-low heat for 6 minutes, stirring periodically. Keep warm under cover.  

Step 2

Heat leftover oil in the big skillet used to fry tortillas over medium heat. Stir occasionally as the onion softens, about 6 minutes.  

Step 3

Add ground beef, chilli powder, salt, cumin, paprika, garlic powder, oregano, and black pepper.  

Step 4

Stir regularly and break the beef into small pieces with the back of the spoon until browned and cooked through, about 8 minutes. Stop cooking.  

Step 5

Spread 2 teaspoons refried beans on each fried tortilla to assemble. Add ¼ cup of seasoned ground meat and any desired toppings to each.
