  • 1/2 cup vegan parmesan cheese
  • Red pepper flake + dried oregano

Instructions

Turn the oven temperature up to 425 degrees Fahrenheit (218 degrees Celsius) and place a rack in the middle of the oven. Bring a large skillet to a temperature of medium.

When it is hot, add the onion and peppers, along with one tablespoon of olive oil (the amount is specified in the original recipe; increase it if you are changing the batch size). After adding salt and herbs, stir the mixture.

Cook for ten to fifteen minutes, or until the mushrooms are tender and seem slightly browned; add them in the final few minutes of cooking. Put aside for later.

To make the sauce, put the tomato sauce in a mixing bowl and then season it with salt and seasonings according to your preference. When necessary, adjust the seasonings. Put aside for later. When using tomato paste, it is important to add water in order to thin it out until you achieve the proper consistency.

Raw cashews, sea salt, nutritional yeast, and garlic powder are ground into a fine meal in a food processor until they reach the consistency of vegan parmesan. If you have not already done so, prepare vegan parmesan. Place the mixture in a jar and store it in the refrigerator to maintain its freshness.

In a floured surface, roll out the dough, and then transfer it to a round baking sheet that has been coated with parchment paper. In order to ensure that the crust is properly crisped, you are going to place the pizza directly into the oven while it is still on the parchment paper.

Since the parchment paper is not going to be placed inside the oven, any round item will do (I use a wood board). A sprinkle of parmesan cheese, the vegetables that have been sautéed, and the desired quantity of tomato sauce (you will have leftovers, which you can store in a jar for later use) can be placed on top prior to serving.

With the help of the baking sheet, carefully put the pizza onto the oven rack, making sure to keep the parchment paper below. It will be easier to prevent it from falling through thanks to the parchment.

Bake for 17 to 20 minutes, or until the edges are golden brown and crunchy. The remaining parmesan cheese, dried oregano, and red pepper flakes should be served alongside the dish. Leftovers are easy to store and do not require reheating. A cold pizza is delicious.
