The Best Fried Rice Recipe
INGREDIENTS
- 2 tablespoons butter, divided
- 3 eggs, whisked
- 2 medium carrots, small dice
- 1 small onion, small dice
- 3 cloves garlic, minced
- 1 cup frozen peas, thawed
- 4 cups cooked and chilled rice, (I either use white or brown rice)
- 3 tablespoons low sodium soy sauce
- 2 tablespoons oyster sauce
- sliced green onions for garnish, if desired
INSTRUCTIONS
One tablespoon of butter should be heated in a big skillet.
When the eggs are thoroughly cooked, add them and scramble. Take them out of the pan and place it aside.
Pour the last tablespoon of butter into the skillet. Cook the onion and carrots in the pan for 3–4 minutes, or until they are soft. Add the garlic and simmer for one more minute after stirring.
After adding the peas and chilled rice, sauté for three to four minutes. Browning should occur on the rice.
Return the eggs to the pan and toss in the oyster sauce, sesame oil, and soy sauce. Cook until thoroughly heated, one to two minutes.
If preferred, garnish with green onions and serve right away.

For a nutritious low-carb twist, try adding riced broccoli, quinoa, or cauliflower in place of the rice.

TIPS FOR MAKING THE BEST FRIED RICE
Select the proper kind of rice: jasmine or long grain rice works best!
For optimum results, use day-old rice that is COLD! The hot oil will crisp up the cold rice.
Warm rice can even get mushy and won’t toast. In case you are pressed for time, prepare the rice beforehand and arrange it in a single layer on a baking sheet. To fast cool it down and use it as advised, place it in the refrigerator or freeze it.
Rinse the rice well before using to get rid of any excess starch and keep it from clumping.
