Easiest Saucy Chicken and Sausage over Creamy Parmesan Polenta Recipe 

A comforting meal: Saucy Chicken and Sausage over Creamy Parmesan Polenta. Savory chicken and sausage in a spicy tomato sauce over creamy polenta.  

– 1 small onion  – 3 cloves garlic – 6 ounce chicken breast – 2 links Italian sausage – salt and pepper to taste – 1 teaspoon dry oregano – ½ cup chicken broth – 1 cup tomato sauce – 1 tablespoon hot sauce – 2 tablespoon butter – 2 tablespoon fresh parsley

Ingredient

In a pot or Dutch oven, heat olive oil on medium. Cook onion and garlic for 2 minutes until tender and transparent.

Sprinkle salt, pepper, and oregano over the chicken and sausage in the skillet. Cook until chicken and sausage brown, about 10 minutes.

Add chicken broth or white wine and scrape away the brown bits from the pan. Cook 2 minutes, then add tomato and hot sauce.

Cook 5 more minutes, then remove from heat and sprinkle with chopped parsley. Add cornmeal and 1 cup water to a cast-iron kettle.

As the cornmeal absorbs water, the mixture will thicken when it boils. Add another cup of water, whisk, and wait for absorption.

Repeat until cornmeal is cooked and no longer uncooked, using 4–4 1/2 cups of water. You'll need to whisk occasionally, but don't watch the pot simmer.

When cornmeal is done, remove from fire and add remaining ingredients. Plate polenta and top with chicken and sausage stew.
